hAPPY MORNING MUFFINS

When I want a quick breakfast on the go I turn to these muffins. They are packed with enough nutrients to get me through my morning. They have 2 servings of fruit and bran both needed for healthy digestion. My kids enjoy them and I feel good knowing they are not filled with preservatives. Enjoy!

Ingredients:

  • 1/2 c unbleached flour

  • 1/2 c almond flour

  • 1/2 c bran

  • 1/4 t salt

  • 1 t baking soda

  • 1 t cinnamon

  • 1/4 t nutmeg

  • 1 t allspice

  • 1 T chia seeds

  • 1 T goji berries-soaked

  • 1 T mulberries or raisins -soaked

  • 1/2 c frozen blueberries

  • 1 c stewed apples

  • 1c shredded carrots

  • 2 eggs

  • 1 T blackstrap molasses

  • 1/c kefir yogurt

  • 1/2 T vanilla

    Preheat oven to 350 degrees.

    In a medium size bowl mix all of the dry ingredients together. In a separate bowl mix the wet ingredients. Once smooth, add the dry ingredients to the wet mixture, do not over mix. Add to muffin tin, I prefer using paper baking cups to avoid clean up. Bake for 18-22 minutes, use a toothpick to see if the muffin mixture comes out clean. Cool for 10-15 minutes
