Ayurvedic Collagen Oat Cookies

These cookies are a perfect snack to curb cravings while providing balancing spices and protein from collagen.

Ingredients:

1 c organic smooth almond or peanut butter

2/3 c DARK brown sugar packed

2 eggs

1/2 c blackstrap molasses

1t vanilla

3/4 c organic oats

2T einkorn flour

1T cacao powder

1/4 t baking soda

1 scoop NEEDED brand collagen

1t cinnamon

1/4 t coriander

1/4 t cardamom

1/2 t himalayan salt

1/4 c carob or dark chocolate chips

flaky Sea Salt for top

How to make:

Preheat oven to 350 and line cookie sheet with Parchment Paper

In a small bowl mix Oats, Flour, Baking Soda, Collagen, Chia Seeds, Cinnamon, Coriander, Salt together and set aside.

In large bowl mix together Nut butter, Eggs, Vanilla, Molasses until smooth, fold in chips

with a spoon scoop out about 1/4c of batter and space out 2-3 inches apart

Bake for 9-11 minutes ( The sweet spot for me is about 10 minutes) I prefer a crispier cookie.

+The magic twist is to tap the cookie sheet a few times on the counter when it comes out of the oven to remove any air from the cookie.

Sprinkle cookies with Flaky Sea Salt

Let cool on a wire rack

Depending on the dollop size you choose you can make about 15 small cookies or 8-10 larger
