savory fall dip
It’s that time of year again when pumpkin’s and squashes are everywhere! With this recipe you can do so many things, from adding to lentil dishes, salads, roasted chicken or snacking with veggies.
Ingredients:
Honey Nut Squash-3 (they are tiny)
Chic peas-1/2 c
Roasted Garlic- 2 cloves
Olive oil- 1-2 T

-Roast the butternut squash with a drizzle of Olive oil and S&P and cook in the oven at 375 degrees for 30 minutes.
-Roast along side the squash a whole head of garlic drizzled with Olive oil.
-Scrape the inside’s of the squash into a food processor, squeeze out 2 cloves of garlic with the squash, add drained and rinsed chic peas.
-Slowly add Olive oil to mixture until desired consistency. Add salt & pepper to your desired taste.
