Savory seeded snack bar

I made this bar after my pregnancy with Romy. Soon after I was into the first several months of postpartum I realized I needed something quick, easy and nutritious. These bars are meant for not just pregnant or postpartum mom’s but anyone wanting a healthy go to fulfilling mid day snack.

Ingredients

  • Sunflower Seeds- 1C

  • Cacao Powder-1/4 C

  • Dates-3-4

  • Almond flour-1/2 C

  • Flax Seeds-2T

  • Coconut Oil-1/4-3/4 C


Mix all ingredients in a mixer of food processor of your choice, I use a Cuisinart food processor until it forms a paste. Add more coconut oil if the mixture does not start to form.

To form into a bar you have several options. Silicone mold ice cube block trays are easy to form the bars. But use whatever you have on hand, you can form them yourself and put on a small tray lined with parchment. Put in the freezer for 30 minutes to an hour.

Note: Make the squares no bigger than 2.5 X 2.5 inches all around.
